Ingredients You Will Need
This prime rib recipe makes a nice and juicy steak using just two ingredients, kosher salt and freshly ground black pepper. You will need enough of both to cover the surface of the prime rib generously.
How to Make Prime Rib
Start by blotting the prime rib dry the night before using paper towels. Next’ season the prime rib generously using the kosher salt and freshly ground black pepper. Place the prime rib in a rimmed baking sheet and place in the refrigerator uncovered overnight, or at least two to four hours before cooking.
The next day, remove the prime rib from the refrigerator and place it on a rack in a roasting pan. Allow the prime rib to warm up to room temperature, about 79 degrees, before placing it in the oven.
Heat the Oven
Heat the oven to 450 degrees to start. Place the prime rib in the oven and cook it at this temperature for 30 minutes. Next, reduce the temperature to 325 degrees and allow the prime rib to cook for an additional 11 to 12 minutes per pound. So, if you have a 10 pound roast, you should cook it at this temperature for about 2 hours.
While some cooks recommend cooking the prime rib at a slower pace, this doesn’t allow the fat to render properly. Cooking at a higher heat gives you a crispier exterior and helps the fat render more effectively.
Allow the Prime Rib to Cook
It is important to cook your prime rib to the correct temperature of 120 degrees. To check the temperature of the interior of the prime rib, use a meat thermometer. The type doesn’t matter as long as it gives you a clear reading. After the interior of the prime rib has reached 120 degrees, remove it from the oven.
Place a piece of aluminum foil over the prime rib and allow it to rest for 30 minutes. Allowing the prime rib to rest before serving allows the meat to soak up the juices, making it more tender and juicy. Slice the meat to the desired thickness, making sure not to slice it too thin.
